Preparation Methods
Grill
- Heat grill to medium.
- Rub the outside of the branzino with the olive oil and season with salt and pepper.
- Grill the branzino over high heat, turning once, until browned and crisp and just cooked through, about 7 minutes per side.
Oven
- Preheat oven to 425°F.
- Line a sheet pan with parchment paper. Season outside of fish with salt to taste.
- Drizzle olive oil over each fish coating the outside and season with salt & pepper.
- Roast the branzino until the fish is just cooked through and flakes easily with a fork, 20 to 22 minutes, flipping after 10 minutes and being careful not to tear the skin.
- Turn the oven to broil and cook, watching carefully, until the skin is crisped and lightly browned, about 3 minutes.
