Heatwave! Turn off your ovens and enjoy a fresh and beautiful summer caprese salad for lunch or dinner. We use beefsteak tomatoes from Liberty Harvest. With a thicker flesh than other varieties, these slicing tomatoes are perfect for caprese salads. Tuck in fresh-stretched Zupan’s Market mozzarella and fragrant basil leaves and you have summer on a platter. This salad has only a few ingredients, so choose the very best of everything from your local Zupan’s Market.
Ingredients
- 4 Oregon Star or Liberty Harvest tomatoes
- 1 pound Zupan’s Fresh-Stretched Mozzarella
- 10-15 basil leaves
- Olive oil
- Kosher salt
- Freshly ground black pepper
Preparation
Slice the tomatoes and mozzarella. Arrange tomato slices on a large serving plate. Layer a mozzarella slice and a basil leaf between each tomato slice. Drizzle with olive oil. Sprinkle with salt and pepper. Serve at room temperature.
Serve with fresh crusty bread to mop up the olive oil and tomato juices.
