Preparation Methods
Oven
- Preheat oven to 425°.
- Place roast in roasting pan (line with aluminum foil for easier cleanup). If desired, scatter onions or fennel on bottom of pan with roast.
- Cook roast for 25 minutes.
- Reduce temperature to 325° and cook an additional 20-25 minutes per pound. Cook until pork reaches 145°.
- Let rest for 15 minutes then slice and enjoy.
