Coppa Roast

Sourced locally from Carlton Farms wrapped with pancetta and seasoned with rosemary.

Preparation Methods


  • Preheat oven to 425°.
  • Place roast in roasting pan (line with aluminum foil for easier cleanup). If desired, scatter onions or fennel on bottom of pan with roast.
  • Cook roast for 25 minutes.
  • Reduce temperature to 325° and cook an additional 20-25 minutes per pound. Cook until pork reaches 145°.
  • Let rest for 15 minutes then slice and enjoy.
