Crisp, sweet apples and melty, rich brie are a match made in heaven, and these apple and brie paninis are proof. Give your sandwiches extra sweetness with a drizzle of clover honey and a smear of gingery fig jam–the buttery brie can hold its own for a delightfully sweet and savory lunch.  

Ingredients

  • 12 slices Grand Central Rustic bread (or other rustic loaf) 
  • ¾ cup mayonnaise, plus more as needed 
  • ¾ cup Hanna’s Honey Clover Honey, plus more as needed 
  • ¾ cup Stonewall Kitchen Fig and Ginger Jam, plus more as needed 
  • 3-4 apples, thinly sliced 
  • 2 pounds Alta Langa Castelbelbo Brie, sliced 
  • Balsamic glaze (optional)  

Preparation

  1. Assemble the sandwiches by layering the bread with mayonnaise, honey, jam, apple slices, brie, and balsamic glaze, if you like. 
  2. Heat a cast iron skillet over medium heat or preheat a panini press. Grill the sandwiches in batches until golden brown on both sides. 
  3. Enjoy warm with your favorite side.
