Not as sweet as the usual candied yams but equally delicious.
Ingredients
- 3 lbs. medium-sized yams
- 3 T unsalted butter
- ½ C sugar
- 1⁄3 C orange juice
- 1 t. nutmeg
- ¼ C pecans, chopped and toasted
- ½ t. orange zest
Preparation
- Preheat oven to 400°.
- Wash and trim yams, then boil them in a large pot
until tender but not mushy. Remove from heat, drain and let cool. Peel yams and slice into coins about ¼” thick. Grease a 13 x 9 x 2″ baking dish with butter. - Melt the butter, then whisk in sugar, orange juice, and nutmeg until combined. Toss yam slices with the sauce and arrange in the dish. Bake for 20-30 minutes, or until heated through. Garnish with toasted pecans and orange zest.
