Easy Roasted Yam Coins

Ingredients

  • 3 lbs. medium-sized yams
  • 3 T unsalted butter
  • ½ C sugar
  • 1⁄3 C orange juice
  • 1 t. nutmeg
  • ¼ C pecans, chopped and toasted
  • ½ t. orange zest

Preparation

  1. Preheat oven to 400°.
  2. Wash and trim yams, then boil them in a large pot
    until tender but not mushy. Remove from heat, drain and let cool. Peel yams and slice into coins about ¼” thick. Grease a 13 x 9 x 2″ baking dish with butter.
  3. Melt the butter, then whisk in sugar, orange juice, and nutmeg until combined. Toss yam slices with the sauce and arrange in the dish. Bake for 20-30 minutes, or until heated through. Garnish with toasted pecans and orange zest.
