Enjoy this colorful, fresh peach salsa with tortilla chips or serve over grilled chicken or fish for a summery meal. If you like your salsa spicy, feel free to add the whole jalapeño, but note the salsa will get spicier as it sits. No need to peel peaches. You won’t notice the skin once the fruit is chopped and the skin adds a nice contrast of color too.
- 2 ripe peaches, seeded and diced
- 1 Roma tomato, seeded and diced
- 1/2 red bell pepper, seeded and diced
- 1/2 jalapeño, seeded and minced
- 1/2 cup diced red onion
- Juice from 1 lime
- 1/2 teaspoon kosher salt
- Black pepper
Combine all ingredients and mix to combine. Adjust seasoning to taste and serve the same day.
