Frisée, Melon & Prosciutto Salad

This isn’t just a salad, it’s a summertime showstopper. Juicy melon, creamy cheese, savory prosciutto, and crisp greens come together for a dish that’s as refreshing as it is indulgent.

Ingredients

  • 3½ cups mixed lettuce and frisée
  • 8 slices prosciutto (or substitute with Coppa or other cured meat)
  • Burrata or mozzarella balls
  • ½ melon, diced or scooped into small balls
  • ½ cup shelled pistachios
  • 1 tablespoons extra virgin olive oil
  • Salt to taste

Preparation

  1. Tuck the sliced or scooped melon in the frisee.
  2. Tear the prosciutto into bite-size pieces and scatter overtop along with pistachios. Place burrata in middle or scatter mozzarella balls.
  3. Drizzle with extra virgin olive oil or your favorite balsamic or vinaigrette.
  4. Season with freshly ground black pepper.
