Lamb rib chops look elegant but are a surprisingly easy weeknight dinner. A mint relish adds a pop of freshness that perfectly complements the flavorful lamb.
Zesty Mint Relish
Makes about one cup
- 2 cups fresh mint leaves
- ½ cup fresh parsley
- ¾ cup Zupan’s Markets Extra Virgin Olive Oil
- Zest and juice of one lemon
- 1 shallot
- ½ to 1 tsp red pepper flakes (depending on desired level of heat )
- 1 tsp salt
- ½ tsp freshly ground black pepper
Lamb Rib Chops
- 12 lamb rib chops
- Salt and pepper
- 2 tbsp Zupan’s Markets Organic Olive Oil
- 1 tbsp butter
For the Zesty Mint Relish
Place all ingredients in a blender. Pulse about 10 times to create a coarse relish. Place relish in a small container and let stand at room temperature until ready to serve.
For the Lamb Rib Chops
Pat rib chops with paper towels and season with salt and pepper. In a 12-inch skillet over medium-high heat, heat olive oil and butter until butter has melted. Add chops in two batches, careful not to crowd them in the pan. Sear the first side until well browned, about 2 minutes. Flip the chops and sear on the other side for 2 minutes and continue to cook until the internal temperature registers 120 to 125 degrees (medium rare). Transfer chops to a platter and serve immediately with zesty mint relish.
