Melon Granita

This is the perfect icy cold, refreshing granita to enjoy on hot summer days. Adding wine prevents the granita from becoming frozen solid. To make this granita a kid-friendly one, just omit the wine.

Ingredients

  • ½ C sugar
  • ½ C water
  • 3 C cantaloupe pieces, chilled and in 1″ cubes
  • ¼ C dry, fruity white wine (optional)
  • 2 T lime juice
  • Lime zest for garnish

Preparation

Place sugar and water in a small saucepan. Heat over medium-high heat; stirring to dissolve sugar.  Reduce heat to medium. Simmer 1 minute. Let syrup cool.

In a food processor, puree cooled syrup with cantaloupe cubes, white wine, and lime juice. Pour mixture into an 8×8″ glass dish, then cover.

Freeze mixture until thoroughly frozen, about 4 hours, stirring with fork every 1 hour.

Before serving, scrape granita with a fork into icy flakes. Spoon approximately 2-3 rounded tablespoons granita into a glass and garnish with lime zest.
