Peach Bellini

This delicious peach purée is added to prosecco or cava for a perfect brunch cocktail.

Ingredients

  • 3 ripe peaches, skinned and pits removed
  • 1 tablespoon sugar
  • 1 teaspoon lemon juice

Preparation

  1. Place all ingredients in a blender until smooth.
  2. Press the mixture through a fine-mesh strainer, then add 2 tablespoons of the purée into each glass.
  3. Fill with your favorite sparkling prosecco or cava. Or try adding to sparkling water for a non-alcoholic alternative.
  4. Serve immediately.
  5. Store remaining puree in an airtight container.
