- 3 ripe peaches, skinned and pits removed
- 1 tablespoon sugar
- 1 teaspoon lemon juice
- Place all ingredients in a blender until smooth.
- Press the mixture through a fine-mesh strainer, then add 2 tablespoons of the purée into each glass.
- Fill with your favorite sparkling prosecco or cava. Or try adding to sparkling water for a non-alcoholic alternative.
- Serve immediately.
- Store remaining puree in an airtight container.
