These sweet potato fries hit the perfect balance of sweet and spicy, and they’re healthier than standard fries because they’re baked. Packed with vitamins A and C, fiber, and protein, sweet potatoes are a nutritional powerhouse. Who’s to say you can’t have a second helping?
Ingredients
2 large sweet potatoes
1-2 T extra-virgin olive oil
2 t. chili powder
1 t. garlic powder
¼ t. cayenne powder
½ t. ground cumin
1 t. kosher salt
½ t. ground black pepper
3-4 T extra-virgin olive oil
Preparation
Preheat oven to 450˚. Coat 2-3 baking sheets with cooking spray.
Cut sweet potatoes into ¼” strips. In a bowl, toss with olive oil, adding enough to evenly coat all the sweet potato strips. Combine the spices, then toss them in with the sweet potato strips; mix to coat.
Spread the sweet potatoes in a single layer on the prepared baking sheets, being sure not to overcrowd. Bake until the sweet potatoes are tender and golden brown, turning occasionally, about 20 minutes.
