Add a punch to ordinary sweet potato hash with a combination of chili powder, paprika, and ground red pepper.
- 2 T olive oil
- 1 t. paprika
- ¾ t. chili powder
- ½ t. salt
- ¼ t. ground red pepper
- 1⁄8 t. black pepper
- 6½ C (about 2½ lbs.) sweet potatoes, peeled and diced
- Preheat oven to 400°.
- Combine the first 6 ingredients in a large bowl; whisk well. Add sweet potatoes; toss to coat.
- Arrange sweet potatoes in single layer on a large greased baking sheet. Bake for 30 minutes or until browned, turning once.
