A Peek Behind the Fungi: Where Our New Mushrooms Are Grown

Mushrooms may seem mysterious, but behind the scenes, their cultivation is both an art and a science. At Zupan’s, we’re excited to introduce a wide selection of mushrooms from local grower Kjelsrud Mushrooms. These Oregon-grown, organic mushrooms are harvested with care and packed with nutrition. They’re rich in vitamins, minerals, and antioxidants, and offer an excellent source of plant-based protein. They also support immune health and promote gut wellness, making them as nourishing as they are delicious.

Whether you’re planning a special meal or just need something quick for dinner, our mushrooms are cut-to-order for peak freshness. You can also grab a pre-cut variety pack for an easy way to explore different textures and flavors.

About

Kjelsrud Mushrooms is the brainchild of Gunnar Resch, who began selling his mushrooms at local farmers markets. Zupan’s Lake Oswego is proud to be the first grocery store to carry this thoughtfully grown harvest, with plans to expand to our other locations soon.

In a climate-controlled facility just over 2,000 square feet, mushrooms are grown in humid conditions (up to 90%) and around 65° – ideal for breathing, growing, and thriving. The process is surprisingly labor-intensive: sterilizing grow bags for up to 18 hours, inoculating them with mycelium, and waiting about a week for the first flush. Most varieties offer two harvests and are grown on a “masters mix” blend of sawdust and soy hulls, optimized for yield and sustainability.


Meet the Mushrooms

Lion’s Mane

Sweet, fragrant, and tender with a texture like crab or lobster. Sauté with garlic, white wine, and parsley or stir-fry in place of meat or tofu.

Blue Oyster

Firm, meaty texture with a mild, nutty flavor. Great sautéed with garlic and herbs, finished with a splash of white wine. Works well in pastas, tacos, or as a pizza topping.

Snow Oyster

Rich in umami with a hearty texture reminiscent of pork belly or scallops. Slice into medallions or shred for pulled “meat” dishes like wraps or sandwiches.

Pink Oyster

Bold, meaty texture with a slightly peppery, seafood-like taste. Perfect for stir-fries, tacos, or crisped into mushroom “bacon.”

Chestnut

Deep, earthy flavor that adds depth to dishes. Roast, grill, or sauté to complement red or white meat.

King Trumpet

Hearty texture and umami-rich flavor. Slice into scallop-style medallions or shred into pulled “meat” recipes.

Italian Oyster

Meaty with a nutty, earthy taste. Excellent for Mediterranean-inspired dishes—roast with olive oil and herbs, stir into risottos, or layer on pizza.

Gold Oyster

Mild and slightly nutty with a touch of citrus. Velvety texture makes it ideal for gourmet sautés, stir-fries, flatbreads, and grain bowls.

Pioppini

Rich, nutty flavor with a peppery finish and firm texture. Great in pasta, risottos, braised meats, and stir-fries.

Cooking with Specialty Mushrooms

These mushrooms may look unfamiliar, but they’re easy to love in the kitchen. Most can be sautéed, roasted, or grilled like your everyday button mushroom, with richer flavor and more exciting texture. Try swapping them into risottos, pasta, stir-fries, or pizza toppings. If you’ve cooked a portobello, you’re already halfway there.
