Brown Sugar Shortbread

These cookies from Ellie are so very good. Decadent with brown sugar, they would pair perfectly with a cup of hot tea. You can make the cookies any shape you like, but I found that a square cut gave the cookies a more traditional “shortbread” appearance.


  • 1 C packed brown Sugar
  • 1¼ C butter (softened)
  • 2¼ C flour
  • 1 egg yolk
  • 1 t. vanilla


  1. Preheat the oven to 350˚.
  2. Cream the butter and sugar until light and fluffy. Add vanilla and egg yolk. Continue to cream until combined. Add the flour and stir to blend.
  3. Place the dough onto a silpat or lined baking sheet and form into a square about ½” thick. Slice into square pieces and bake for 10-12 minutes, or until lightly brown.
