These cookies from Ellie are so very good. Decadent with brown sugar, they would pair perfectly with a cup of hot tea. You can make the cookies any shape you like, but I found that a square cut gave the cookies a more traditional “shortbread” appearance.
Ingredients
- 1 C packed brown Sugar
- 1¼ C butter (softened)
- 2¼ C flour
- 1 egg yolk
- 1 t. vanilla
Preparation
- Preheat the oven to 350˚.
- Cream the butter and sugar until light and fluffy. Add vanilla and egg yolk. Continue to cream until combined. Add the flour and stir to blend.
- Place the dough onto a silpat or lined baking sheet and form into a square about ½” thick. Slice into square pieces and bake for 10-12 minutes, or until lightly brown.
