One of Japan’s most beloved grab-and-go lunches is the egg salad sandwich, known for its creamy filling and impossibly soft bread. Found in bakeries, grocery stores, and convenience stores across Japan, it’s a simple comfort food that’s earned a devoted following. Celebrity chefs like Anthony Bourdain and David Chang have famously praised the Japanese egg salad sando, helping introduce this everyday staple to food lovers around the world.
Our version starts with fluffy Japanese milk bread, known as shokupan, layered with classic egg salad and soft-boiled eggs. Popularized in Japan after World War II, shokupan is prized for its lightly sweet flavor and pillowy texture. The result is rich, satisfying, and craveable.
Meet Oyatsupan Bakers
The bread behind our Egg Salad Sando comes from Oyatsupan Bakers, a beloved local bakery in Beaverton specializing in authentic Japanese breads and pastries. Founded by Hiroyuki Horie after more than 25 years in the baking industry, Oyatsupan was created to share the comfort and craftsmanship of Japanese baking with the local community.
Known for their exceptional shokupan, Oyatsupan has built a loyal following throughout the Portland area. Their soft, pillowy milk bread is the perfect foundation for a traditional Japanese-style egg salad sandwich, and we’re proud to feature it in our Grab & Go case during Kanpai! Japan Month and beyond.
