About BakeShop & Kim Boyce

Kim Boyce, a nationally recognized baker and founder of BakeShop in Portland, Oregon, has been baking for many years, with experience in renowned kitchens like Spago and Campanile. After becoming a mother, she sought to provide her kids with nutritious, quality food, which led her to explore whole-grain baking. Using heirloom grains like spelt, rye, and amaranth, she began creating indulgent yet nutritious pastries.

In 2011, she opened BakeShop, a retail and wholesale bakery in NE Portland, where you can find her most days. Kim’s pioneering work in whole-grain baking has earned her widespread recognition, including being named a James Beard Award semifinalist for Outstanding Baker in both 2016 and 2019. Her cookbook Good to the Grain, which features recipes with 12 different whole grains, earned a James Beard Award nomination. Kim has also contributed to publications like Bon Appétit, O, NPR, Portland Monthly, Whole Living, and the Los Angeles Times.
