Winter season is Dungeness crab season! Most of the bays in Oregon open up and you can find the freshest, plumpest, and sweetest crabs during this most excellent time of year. At Zupan’s you can find whole cooked crabs or fresh lump crab meat ready to go.

In this dish, I used stone-ground mustard and a little less vinegar to keep the dressing balanced between acidic and tangy.

A posset is a type of dessert similar to pudding that is made with citrus juice, cream, and sugar. Any citrus flavor will work great in posset. Mandarin orange is naturally sweet so the addition of tart lemon juice will balance the sweetness.

Grapefruit Carpaccio with Spicy Ponzu Vinaigrette

A slight variation of sunomono, a Japanese-style vinegared salad which has a refreshing taste. Here, the grapefruit juice is used to create ponzu vinaigrette and the degree of spiciness can be made mild or hot, depending on your taste.
